Quick & Easy Salsa

Tired of the regular tomato based salsa? How about going outside the box and trying a new salsa. My black bean, roasted corn & avocado salsa will surely liven up your next party or taco night! It's quick and easily made while you are cooking everything else for taco night or what have you.


Black bean, roasted corn & avocado salsa

Ingredients:

2 Avocados                        1 can black beans, drained & rinsed                 4 ears sweet corn
4 tbs lime juice                   1 tbs olive oil                                                  1 tsp minced garlic
big pinch of kosher salt        big pinch of black pepper                                1 tbs dried cilantro
2-3 tbs freshly chopped cilantro, chopped very fin                                       1/2 tsp hot sauce or taco sauce

Grill corn on the grill until it just begins to char and color. Turning every 5-6 mins until all sides have color (about 15 mins. total). While corn is grilling, in a dish add the lime juice, olive oil, garlic, S&P, cilantro, and hot sauce/taco sauce. Whisk thoroughly together. Peel and dice avocados and add to mixture. Stir well, folding the avocados gently until they are well covered (prevents them from browning). Next drain and rinse your black beans and add those to the avocados. Mix gently again by folding, which keeps the avocados from smooshing. Once corn is cooked, let it cool for 5-10 mins and shave off the cob. Add corn to the avocados & beans. Gently mix by folding again. Cover tightly with saran wrap or press & seal and refrigerate until ready to serve. Can also sprinkle shredded cheddar cheese on top too. Serve with your favorite tortilla chip, on top of tacos & burritos or quesadillas!
